| The Liguria
represents around the 0,3% of the Italian wines
production. The Ligure wine-growing is sometimes extreme,
with vineyards that directly lean out on the sea. Where
the little and brave wine-growers are forced to steal
piece of earth to the mountain, and where the vintage
can be made only manually , and with so much work. The
wines symbol of the Liguria are the Rossese of
Dolceacqua, the Pigato, and the Cinque Terre, delicious
the version "passita", note with the name of Sciacchetrà
(Sciac-trà).
Rossese di
Dolceacqua DOC:The Rossese is produced in Dolceacqua, Soldano,
and other neighboring places, in one of the historical
areas of the "ligure" wine-growing , the west. The
Rossese of Dolceacqua derives for at least 95% from red
grapes Rossese, and from berry grapes red not aromatic.
For the normal version there is no aging, while for the
Superior version there is 1 year of aging.
Pigato The pigato
is a white wine that reaches an alcoholic gradation of
11°, very proper with the dishes of fish, roast and
fresh cheeses; its origins are uncertain, while its name
originates from the stains of its grapes.
Vermentino The
vermentino is a white wine, calm, dry, with an alcoholic
gradation of 11°; it must be served to a temperature of
10°- 12°; it approaches to appetizers of fishes and
vegetables, fried fish, roast in grate or sauce and to
fresh cheeses.
Sciacchetrà
Sciacchetrà (pronounced shock-eh-trah) is a rare Italian
wine. It's history dates to ancient Rome. Boccaccio
mentioned it in his writings and Pope Paul III defined
it as a "smoky wine of great aroma, with the color of
gold..." He also called it a nutritious wine. It is made
by allowing the best Cinqueterre grapes (90-95% Bosco,
5-10% Albarola) to wither over a long period of time.
The appellation states that after fermentation the wine
must be aged in wood for at least one year. In the local
dialect, the word "sciacchetrà" means "press it and
forget about it for a long while." Golden yellow with
amber hues and intense aromas of mountain flowers and
honey that carry through to the palate. It is a gentle,
balanced wine with an optimal level of sweetness that
does not cloy the palate.
